Recipes
1 ½ cups self rising flour Combine flour, pecans and brown sugar in a bowl, set aside. Mix together egg, milk, butter and vanilla; add all at once to flour mixture. Stir only until dry ingredients are moistened. Spoon into greased muffin pan, filling 2/3 full. Bake at 400 degrees for 15 minutes or until golden brown. Yield 10 muffins. Harvest Apple Cake 2 cups grated apples
Combine apples and sugar in a bowl. Beat egg and oil together and add to apples. Combine dry ingredients and add to apple mixture. Mix well. Stir in pecans and vanilla. Pour batter into a greased 8-inch square baking pan and cook in a 350 degree oven for 40 to 45 minutes. Serve with ice cream. Yield 8 servings. SPICED PECANS
3 1/2 C pecans Blend sugar, cinnamom, and salt into egg whites. Stir in pecans. Melt butter in baking sheet. Spread pecan mixture over butter in pan and bake approx. 30 minutes (stir every 10 minutes) til pecans absorb all butter. Use 325 degree oven. Pecans will be golden brown. LEMON PECAN PIE 3 whole eggs, unbeaten Mix egg yolks and whites together well, do not use a mixer. Add other ingrendients and pour into a 8" unbaked pie shell. Bake in a 300 degree oven for about 1 hour, being careful not to brown too quickly. PECAN CHICKEN 1/4 C honey Combine honey & mustard. Spread on both sides of chicken. Roll Chicken in chopped pecans. Place in lightly greased baking dish. Bake at 360 degrees for 1 hour or until tender. MORE TO COME! | ||||||||||||||
